Minestrone: This soup begins with a nourishing homemade broth unlike traditional minestrone you will enjoy freshly cooked quinoa instead of pasta to increase the level of protein and reduce the level of process starch. Root vegetables and classic Italian spices provide the foundation of this variation of classic minestrone. White potatoes are upgraded to local blue potatoes.

Vegan Gypsy: This soup begins with a nourishing homemade broth, fresh organic vegetables; onions, garlic, peppers, sweet potatoes, carrots and additional surprises. added with an exotic selection of spices along with scratch chickpeas that have been lovingly soaked, rinsed, massaged and infused with minerals from local, sustainably raised seaweed. This soup is finished with fresh spinach and parsley. This is more of a stew than a soup and I’ve had cleansers who have enjoyed this a the main staple of their cleanse.

Kitchari: Traditional Ayurveda cleansing food. Basmati rice, mungbeans, ayurvedic spices and seasonal vegetables

Chana Marsala: A savory Indian chickpea dish. Chickpeas are soaked, rinses and cooked with local seaweed before adding them to slow cooked onions, peppers, ginger, garlic and other Indian spices. This dish is finished off with fresh spinach and lemon juice.

Indian spiced lentils: Onions, garlic and ginger are slowly cooked before adding traditional Indian spices.

Spicy Green Beans with Tempe: Garlic and red pepper add a spice to this one dish meal. Tempe is soaked and marinated in soy and ginger.

Buddha’s Delight : Carrots, cauliflower, broccoli, green beans, sweet peppers and seasonal greens prepared with fresh spices and seasonings.
